As someone who brings her lunch to work five days a week, every week, I know how boring it can be to bring the same thing over and over again. However, you don’t want to spend tons of time prepping a fancy lunch in the morning! Simple is better. Today I thought I’d share five lunch ideas for those of you who are looking to mix up your lunch routine.
- Homemade Chicken Vegetable Pot Noodle from Kitchen Sanctuary. Love that you cook the noodles right at work - in a MUG!
- Rainbow Salad in a Jar with Avocado Hummus from Oh My Veggies. How cute is this!? And easy to throw in your bag on the way to work!
- Veggie and Hummus Sandwich from Pop Sugar. Had to add a sandwich on here, it’s a lunchtime classic!
- Picnic Yogurt Rice from Chef de Home. I never would have thought of this myself, but you get so much good stuff from the yogurt which, along with the rice, is light but filling!
- Chickpea Curry from Hari Ghotra. I love curry and this is a great and healthy way to do it. Make it in a big batch and bring to the office!
