Yep, today I am 26 years old! Good lord that sounds so old to me. Always thought I'd be married and have a career by now Hmm. Anyway, despite my old age, I do LOVE my birthday. I mean, come on, a whole day (aka week) to celebrate me? Bring it on!

Today I don't have much going on - heading downtown to do a little shopping and spend some birthday money, but I'm just going to pretend that tomorrow night's Halloween celebration is for me and I'm also having a PARTAY on Saturday! Wild. Anyway, what's better for a birthday breakfast than a bowl of berry-filled oatmeal? Am I right? I'm sure you could have thought of other things but that's what I have for you today! Spooky Snacks and Healthy Halloween Treats

Who doesn't love berries? oatmeal 1 Raspberries are probably my favorite, tied with strawberries. I just love their texture! Plus I like stuffing the empty space in the middle with almond butter. Or chocolate. Or both. Just a suggestion for you all. oatmeal 2 When I heard yesterday was National Oatmeal Day and that I had the opportunity to use some fresh Driscoll's berries, I knew I wanted to make a new kind of oatmeal. Same basic, easy recipe but different add-ins! Raspberry Cinnamon Oatmeal 2 The result? Delicious. Raspberry Cinnamon Oatmeal 4 Ingredients: 1/3-1/2 cup oatmeal (or oat bran) 1/3-1/2 cup milk of choice 1/3-1/2 cup water 1/2 T psyllium husk (optional - can also use ground flax or chia seeds) 3 egg whites 1 tsp cinnamon 1 packet Stevia 1 tsp vanilla 3/4 cup fresh raspberries Directions: First, place all dry ingredients in a small sauce pan. Add water, milk and vanilla, turn on heat and allow to simmer. Stir occasionally. Add in egg whites and raspberries, stir vigoriously to mix egg whites and raspberries into oatmeal until egg whites are cooked and oatmeal reaches desired consistency. Top with 1 T of nut butter, or any other toppings!   Raspberry Cinnamon Oatmeal You could also use cocoa powder instead of cinnamon to make Chocolate Raspberry Oatmeal. I considered it but was just dying for some cinnamon! That's what I love about Oatmeal - you can adjust the add-ins to fit whatever you're craving!   If you could make any flavor oatmeal right now, what would you make?
