How I Knew We'd Be Friends

First of all, I HAVE to share my breakfast from yesterday. I was really craving a smoothie when I got done with my strength training workout at the gym, so I whipped one up, and when I say whipped, I'm serious! In the mix: 1/2 cup unsweetened vanilla So Delicious Coconut Milk, 1/2 frozen banana, 1/2 cup frozen strawberries, 1/2 cup frozen mixed berries, 1 scoop vanilla protein powder, and truvia.

DO YOU SEE THAT??? It was like mousse!!! I didn't even add xantham gum or anything! I'm not sure if it's because I used So Delicious coconut milk instead of almond milk, or if it's because I didn't have any spinach to put in it, but it was AMAZING. So much fun to eat!

So on to my guest recipe. I can't wait to try this out myself!

Do you all have friends who are particularly good at something? Gifted, if you will? Well I do. Her name is Maddie and she can bake. You may think, oh yea I can bake. Or, my mom makes some great chocolate chip cookies. Oh no. Maddie should own a bake shop. My favorite Maddie creations:

Carrot Cake - she made this in high school in celebration of me being in a poetry symposium (don't ask ) and it was my first carrot cake ever. Since then, carrot cake has been my favorite kind of cake.

Chocolate S'More's Cookies - she sent these to me freshman year of college, when I was having a really hard time adjusting to school. They were, and still are, the best cookies I've ever had. I re-created them for the law firm I interned for before I left Charleston, and everyone ended up taking home several.

Mexican Wedding Cookies - she sent these to me this summer (in a Disney Princess tupperware container, mind you) and they were amazing! They were perfectly moist and managed to last me two weeks!

Although I have not tried these cookies (she lives in Colorado ), I know they're good. Why? Because she made them.

Oatmeal Chocolate Chip Cookies

Makes 2-4 dozen cookie hunks

c. butter, softened

c. unsweetened applesauce

1 c. honey (or less, depending on taste)

1 egg

1 tsp. vanilla

1 c. whole-wheat flour

1 tsp. baking soda

tsp. cinnamon

2 c. rolled oats

c. chopped nuts

c. chocolate chips

Preheat oven to 350 degrees. Whisk together butter, applesauce and honey. Add egg and vanilla, beat until smooth. Combine wet ingredients with flour, baking soda and cinnamon. Fold in oats, nuts and chips. Place by rounded tablespoon on greased cookie sheet. Bake for 9-11 minutes. Allow to cool on wire rack. Enjoy!
